Lemper Daging Sapi ~ Steamed Glutinous Rice with Spiced Beef Floss


A. Ingredients (Spiced Beef Floss):

1. Shredded Beef (Stem first before shredded)
2. Coriander (ketumbar)
3. Pepper (merica)
4. Cumin (jintan)
5. Red onion (bawang merah)
6. Garlic (bawang putih)
7. Tamarind (asam matang)
8. Galangal (lengkuas)
9. Aromatic Ginger (Kaempferia galanga) (kencur)
10. Kaffir lime leaves (daun jeruk purut)
11. Lemongrass (serai)
12. Candlenut (kemiri)
13. Salt (garam)
14. Sugar (gula)
15. Coconut milk (Santan)



Instructions (Spiced beef floss):
1. Grind all of the spices, except the Lemongrass.
2. Heat up 1 tbsp cooking oil.
3. Stir-fry the spices and lemongrass.
4. Add shredded beef
5. Add coconut milk
6. Cook until the water (coconut milk) is dry

B. Ingredients (Glutinous Rice/Sticky Rice):

1. Glutinous Rice
2. Lemongrass
3. Coconut milk
4. Pandan leaves
5. Salt
6. Water

Instructions (Glutinous Rice):

1. Soak the glutinous rice in a bowl of water for an hour.
2. Drain and rinse the rice. Put the rice in a steam pot.
3. Add water and steam for 15 minutes.
4. Take the glutinous rice and add the coconut milk, salt, pandan leaves, and lemongrass.
5. Put back the glutinous rice into stem pot and steam again for another 15 minutes until the rice is cooked.
6. Take a large tablespoon of rice and place onto a banana leaf. Flatten the rice to 1/2 in thickness then put a full teaspoon of spiced beef floss in the center. Shape the rice into a mound covering the filling.
7. Roll the banana leaf to cover the filled glutinous rice.
8. Served while it's hot
